She spreads cream cheese seasoned with onion + ranch powder on slices of ham and rolls tight around just barely cooked fresh asparagus. They cut into pinwheels and place on toothpick or decorate pick on site. These can be passed or plattered for events or a brunch - the perfect little bite.<br /><br />This past winter we stumbled on a case of white asparagus in Restaurant Depot that were curiously enough less $$$ than the green. We used them several ways. The first was a riff on the proscuitto and we wrapped braesola - cured filet of beef (in the style of proscuitto) around them and passed as an hors d'oeuvre at a predominately male attended NYC Gay birthday party - needless to say - the look of this simple but elegant h-d was the talk of the party - They are a great low carb, easy and elegant item to produce.<br /><br />With the left overs from the case of white asparagus we produced mini loaf pans of white asparagus and goats cheese frittata which we were able to freeze and use at a later event. They are a great idea for a quick breakfast on the run too - just pop into refrigerator the night before and viola - delicious. For the passed hors d'oeuvre of white asparagus and goats cheese frittata we cut neat slices from the mini loaves and topped with a smoked paprika aioli and micro greens and served on disposable asian spoons for an elegant vegetarian hors d'oeuvre in a different format than the first go around. Bake until the cheese softens. Remove and garnish with balsamic glaze and toasted pecans. <br />Asparagus does pair beautifully with crabmeat.
